Winemaking: crushing and destemming, gentle pressing and fermentation in stainless steel at controlled temperature with selected yeasts. Natural refermentation in the bottle.
Ageing: on the lees in the bottle until consumption.
Color: cherry-pink with the typical haze of bottle refermentation.
Bouquet: notes of fresh red fruits (wild strawberry, cherry), with floral hints and light yeasty nuances.
Taste: fresh, savory and persistent, with fine bubbles and a harmonious finish.
Particularity: it can be enjoyed clear, after decanting, or shaken to enhance its more rustic and complex character.
Food pairings: ideal as an aperitif, it pairs with delicate, not overly spicy cured meats, risottos and light first courses. Also perfect with fried foods and seafood appetizers.
